Ingredients

  • 4 chicken thighs, skin-on
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp curry powder
  • 1 tsp paprika
  • 2 cups chicken broth
  • 1 cup maize flour
  • 4 cups water
  • Salt to taste

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. In a large pot, brown the chicken thighs on both sides. Remove and set aside.
  3. In the same pot, sauté the onions, garlic, and ginger until fragrant.
  4. Add the tomatoes, curry powder, and paprika. Cook until the tomatoes break down.
  5. Return the chicken thighs to the pot and add the chicken broth. Simmer for 45 minutes.
  6. While the stew is simmering, prepare the Ugali. In a separate pot, bring the water to a boil.
  7. Gradually add the maize flour to the boiling water, stirring continuously to avoid lumps.
  8. Cover and let it cook for 5-10 minutes, stirring occasionally, until it reaches a thick, smooth consistency.
  9. Serve the Ugandan Chicken Stew with the Ugali hot, garnished with fresh cilantro.
