Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, chopped
- 3 tomatoes, diced
- 2 bell peppers, sliced
- 3 carrots, sliced
- 2 potatoes, diced
- 2 cups chicken broth
- 2 tablespoons tomato paste
- 3 garlic cloves, minced
- 1 teaspoon ginger, grated
- 1 teaspoon curry powder
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper (optional for heat)
- Salt and pepper to taste
- 2 tablespoons cooking oil
Instructions
- Season the chicken pieces with salt, pepper, and half of the minced garlic.
- Heat the cooking oil in a large pot over medium heat. Add the seasoned chicken and brown on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the onions and remaining garlic. Sauté until the onions are translucent.
- Add the tomatoes, bell peppers, carrots, and potatoes to the pot. Cook for 5 minutes, stirring occasionally.
- Stir in the tomato paste, ginger, curry powder, paprika, and cayenne pepper (if using). Cook for 2 minutes to release the flavors.
- Return the browned chicken pieces to the pot. Pour in the chicken broth and bring the stew to a simmer.
- Cover the pot and let the stew cook for 40-45 minutes, or until the chicken is tender and the vegetables are cooked through.
- Adjust the seasoning with salt and pepper, if needed.
