Ugandan Donuts (mandazi)

Ingredients

  • 3 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground cinnamon
  • 1/4 cup coconut milk
  • 1/2 cup water
  • Vegetable oil for frying

Instructions

  1. In a large bowl, mix together the flour, sugar, baking powder, salt, cardamom, and cinnamon.
  2. Add the coconut milk and water to the dry ingredients and mix until a dough forms.
  3. On a floured surface, roll out the dough to about 1/4 inch thickness and cut into desired shapes.
  4. Heat the vegetable oil in a deep pan over medium heat.
  5. Fry the donuts in batches until golden brown, about 2-3 minutes per side.
  6. Remove the donuts from the oil and place on a paper towel-lined plate to drain excess oil.
  7. Serve the donuts warm and enjoy!
