Ingredients
- 1 cup groundnuts (peanuts), shelled and roasted
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 4 cups vegetable or chicken broth
- 1 cup coconut milk
- Salt and pepper to taste
Instructions
- In a blender or food processor, grind the roasted groundnuts into a fine powder.
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic, ground coriander, cumin, and paprika to the pot. Cook for 1-2 minutes, stirring constantly.
- Pour in the vegetable or chicken broth and bring the mixture to a simmer.
- Stir in the ground groundnuts and coconut milk. Simmer for 20-25 minutes, stirring occasionally.
- Season the soup with salt and pepper to taste.
- Serve the Ugandan Groundnut Soup hot, garnished with a sprinkle of groundnut powder and a drizzle of coconut milk.
