Ugandan Marinated Meat Skewers (akaboozi)

Ingredients

  • 1 kg beef, cut into cubes
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine the beef, onion, garlic, ginger, paprika, cayenne pepper, vegetable oil, salt, and pepper. Mix well to ensure the meat is evenly coated. Cover and refrigerate for at least 2 hours or overnight to marinate.
  2. Thread the marinated meat onto the soaked wooden skewers, dividing the meat evenly among the skewers.
  3. Heat a stovetop grill pan or skillet over medium-high heat. Place the skewers on the grill and cook for about 5-7 minutes on each side, or until the meat is cooked to your desired level of doneness.
  4. Remove the skewers from the grill and let them rest for a few minutes before serving.
