Ugandan Omelette (rolex)
The Ugandan Omelette, also known as Rolex, is a popular street food in Uganda. It is a simple yet delicious omelette rolled up in a chapati, making it a perfect on-the-go meal or snack.
Ingredients
- 4 eggs
- 2 large chapatis
- 1 tomato, diced
- 1/2 onion, thinly sliced
- 1/4 cup cabbage, shredded
- 1/4 cup carrots, grated
- 1/4 cup bell peppers, diced
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a bowl, beat the eggs and season with salt and pepper.
- Heat 1 tablespoon of oil in a pan over medium heat. Pour in the beaten eggs and cook until set, then flip and cook the other side. Remove from the pan and set aside.
- Heat the remaining oil in the same pan and sauté the onions, tomatoes, cabbage, carrots, and bell peppers until they are tender.
- Place a chapati on a clean surface and place the omelette on top. Spoon the sautéed vegetables over the omelette.
- Roll up the chapati with the omelette and vegetables inside. Repeat with the second chapati.
- Serve the Ugandan Omelette (Rolex) immediately and enjoy!
