Ugandan Omelette (rolex)

The Ugandan Omelette, also known as Rolex, is a popular street food in Uganda. It is a simple yet delicious omelette rolled up in a chapati, making it a perfect on-the-go meal or snack.

Ugandan Omelette (rolex)

Ingredients

  • 4 eggs
  • 2 large chapatis
  • 1 tomato, diced
  • 1/2 onion, thinly sliced
  • 1/4 cup cabbage, shredded
  • 1/4 cup carrots, grated
  • 1/4 cup bell peppers, diced
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a bowl, beat the eggs and season with salt and pepper.
  2. Heat 1 tablespoon of oil in a pan over medium heat. Pour in the beaten eggs and cook until set, then flip and cook the other side. Remove from the pan and set aside.
  3. Heat the remaining oil in the same pan and sauté the onions, tomatoes, cabbage, carrots, and bell peppers until they are tender.
  4. Place a chapati on a clean surface and place the omelette on top. Spoon the sautéed vegetables over the omelette.
  5. Roll up the chapati with the omelette and vegetables inside. Repeat with the second chapati.
  6. Serve the Ugandan Omelette (Rolex) immediately and enjoy!
