Ugandan Pancakes (kabalagala)

Ingredients
- 2 cups all-purpose flour
- 1 ripe banana, mashed
- 1/4 cup sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup water
- Oil for frying
Instructions
- In a large bowl, mix together the flour, mashed banana, sugar, baking powder, and salt.
- Gradually add water to the dry ingredients and mix until you have a smooth, thick batter.
- Heat oil in a frying pan over medium heat.
- Spoon the batter into the hot oil to form small pancakes.
- Fry the pancakes for 2-3 minutes on each side until they are golden brown and crispy.
- Remove the pancakes from the pan and place them on a paper towel to drain excess oil.
- Serve the Kabalagala hot and enjoy!
