Ugandan Pancakes (kabalagala)

Ingredients

  • 2 cups all-purpose flour
  • 1 ripe banana, mashed
  • 1/4 cup sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup water
  • Oil for frying

Instructions

  1. In a large bowl, mix together the flour, mashed banana, sugar, baking powder, and salt.
  2. Gradually add water to the dry ingredients and mix until you have a smooth, thick batter.
  3. Heat oil in a frying pan over medium heat.
  4. Spoon the batter into the hot oil to form small pancakes.
  5. Fry the pancakes for 2-3 minutes on each side until they are golden brown and crispy.
  6. Remove the pancakes from the pan and place them on a paper towel to drain excess oil.
  7. Serve the Kabalagala hot and enjoy!
