Ingredients

  • 1 kg pork, cut into cubes

  • 2 green bell peppers, sliced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 2 cups beef broth
  • 2 tablespoons vegetable oil
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger, and sauté until fragrant.
  2. Add the pork cubes to the pot and brown on all sides.
  3. Stir in the tomatoes, curry powder, paprika, and cayenne pepper. Cook for 5 minutes, allowing the flavors to meld.
  4. Pour in the beef broth and bring the stew to a simmer. Cover and cook for 1 hour, stirring occasionally.
  5. Add the bell peppers, carrots, and potatoes to the stew. Simmer for an additional 30 minutes, or until the pork and vegetables are tender.
