Ugandan Pork Stew (ekyendu)

Ingredients
- 1 kg pork, cut into cubes
- 2 onions, chopped
- 3 tomatoes, diced
- 3 garlic cloves, minced
- 1 inch ginger, grated
- 2 green bell peppers, sliced
- 2 carrots, sliced
- 2 potatoes, diced
- 2 cups beef broth
- 2 tablespoons vegetable oil
- 1 teaspoon curry powder
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger, and sauté until fragrant.
- Add the pork cubes to the pot and brown on all sides.
- Stir in the tomatoes, curry powder, paprika, and cayenne pepper. Cook for 5 minutes, allowing the flavors to meld.
- Pour in the beef broth and bring the stew to a simmer. Cover and cook for 1 hour, stirring occasionally.
- Add the bell peppers, carrots, and potatoes to the stew. Simmer for an additional 30 minutes, or until the pork and vegetables are tender.
- Season with salt and pepper to taste. Serve the Ugandan Pork Stew hot with steamed rice or crusty bread.
