Ugandan Savory Pastries (samosas)
Ugandan savory pastries, also known as samosas, are a popular snack in Ugandan cuisine. These delicious pastries are filled with a flavorful mixture of spiced potatoes, peas, and ground meat, then deep-fried to crispy perfection.
Ingredients
- 2 large potatoes, boiled and mashed
- 1 cup green peas
- 1/2 lb ground beef or lamb
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp chili powder
- Salt to taste
- 12 samosa wrappers or phyllo pastry sheets
- Oil for frying
Instructions
- In a pan, heat some oil and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add the minced garlic, grated ginger, and ground meat. Cook until the meat is browned.
- Stir in the coriander powder, turmeric powder, chili powder, and salt. Mix well.
- Add the mashed potatoes and green peas. Cook for a few minutes until the mixture is well combined. Remove from heat and let it cool.
- Take a samosa wrapper or phyllo pastry sheet and place a spoonful of the filling at one end. Fold the pastry over the filling to form a triangle, then continue folding until the end of the pastry. Seal the edge with a flour-water paste.
- Heat oil in a deep pan and fry the samosas until golden brown and crispy. Drain on paper towels to remove excess oil.
- Serve the Ugandan savory pastries hot with your favorite dipping sauce or chutney.
