Ugandan Savory Pastries (samosas)

Ingredients

  • 2 large potatoes, boiled and mashed
  • 1 cup green peas
  • 1/2 lb ground beef or lamb
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder
  • Salt to taste
  • 12 samosa wrappers or phyllo pastry sheets
  • Oil for frying

Instructions

  1. In a pan, heat some oil and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
  2. Add the minced garlic, grated ginger, and ground meat. Cook until the meat is browned.
  3. Stir in the coriander powder, turmeric powder, chili powder, and salt. Mix well.
  4. Add the mashed potatoes and green peas. Cook for a few minutes until the mixture is well combined. Remove from heat and let it cool.
  5. Take a samosa wrapper or phyllo pastry sheet and place a spoonful of the filling at one end. Fold the pastry over the filling to form a triangle, then continue folding until the end of the pastry. Seal the edge with a flour-water paste.
  6. Heat oil in a deep pan and fry the samosas until golden brown and crispy. Drain on paper towels to remove excess oil.
  7. Serve the Ugandan savory pastries hot with your favorite dipping sauce or chutney.
