Ingredients

  • 1 lb white fish fillets, such as cod or haddock
  • 1 onion, sliced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 4 cups fish or vegetable broth
  • 1 bay leaf
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the broth to a simmer over medium heat.
  2. Add the onion, carrots, and potatoes to the pot and cook for 10 minutes.
  3. Add the fish fillets and bay leaf to the pot and cook for an additional 10-15 minutes, or until the fish is cooked through.
  4. Season the soup with salt and pepper, then stir in the fresh dill.
  5. Remove the bay leaf and serve the Ukha hot, garnished with additional dill if desired.
