Ukha Utopia
Ukha Utopia is a traditional Russian fish soup that is light, flavorful, and perfect for any time of the year.
Ingredients
- 1 lb white fish fillets, such as cod or haddock
- 1 onion, sliced
- 2 carrots, sliced
- 2 potatoes, diced
- 4 cups fish or vegetable broth
- 1 bay leaf
- 1/4 cup fresh dill, chopped
- Salt and pepper to taste
Instructions
- In a large pot, bring the broth to a simmer over medium heat.
- Add the onion, carrots, and potatoes to the pot and cook for 10 minutes.
- Add the fish fillets and bay leaf to the pot and cook for an additional 10-15 minutes, or until the fish is cooked through.
- Season the soup with salt and pepper, then stir in the fresh dill.
- Remove the bay leaf and serve the Ukha hot, garnished with additional dill if desired.
