Ukha (zaporizhian Fish Stew)

Ingredients

  • 2 lbs white fish fillets, such as cod or haddock
  • 1 onion, sliced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 4 cups fish or vegetable broth
  • 1 bay leaf
  • 1/4 cup fresh dill, chopped

Instructions

  1. In a large pot, bring the fish or vegetable broth to a simmer over medium heat.
  2. Add the onions, carrots, and potatoes to the pot and cook for 10 minutes.
  3. Gently place the fish fillets into the pot and add the bay leaf. Simmer for an additional 15-20 minutes, or until the fish is cooked through.
