Ukha (zaporizhian Fish Stew)
Ukha is a traditional Cossack fish stew that has been enjoyed for centuries. This hearty and flavorful dish is a staple in Cossack cuisine, known for its use of fresh ingredients and simple cooking techniques.
Ingredients
- 2 lbs white fish fillets, such as cod or haddock
- 1 onion, sliced
- 2 carrots, sliced
- 2 potatoes, diced
- 4 cups fish or vegetable broth
- 1 bay leaf
- 1/4 cup fresh dill, chopped
- Salt and pepper to taste
Instructions
- In a large pot, bring the fish or vegetable broth to a simmer over medium heat.
- Add the onions, carrots, and potatoes to the pot and cook for 10 minutes.
- Gently place the fish fillets into the pot and add the bay leaf. Simmer for an additional 15-20 minutes, or until the fish is cooked through.
- Season the stew with salt and pepper, then stir in the fresh dill.
- Remove the bay leaf and serve the Ukha hot, garnished with additional dill if desired.
