Ukrainian Borscht with Sour Cream (Борщ)

Ingredients

  • 3 medium beets, peeled and grated
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 3 potatoes, peeled and diced
  • 2 carrots, grated
  • 1/2 small head of cabbage, shredded
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1/2 cup sour cream, for serving

Instructions

  1. In a large pot, combine the grated beets and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  2. Add the chopped onion, diced potatoes, grated carrots, shredded cabbage, minced garlic, diced tomatoes, tomato paste, bay leaves, sugar, salt, and pepper to the pot. Simmer for an additional 30-40 minutes, or until the vegetables are tender.
  3. Remove the bay leaves and adjust the seasoning if needed.
  4. Serve the borscht hot, topped with a dollop of sour cream.
