Ukrainian Borscht with Sour Cream (Борщ)
Borscht is a traditional Ukrainian soup known for its vibrant color and rich flavor. This recipe combines beets, cabbage, and other vegetables to create a hearty and nutritious dish that is perfect for cold winter days.
Ingredients
- 3 medium beets, peeled and grated
- 4 cups vegetable broth
- 1 onion, chopped
- 3 potatoes, peeled and diced
- 2 carrots, grated
- 1/2 small head of cabbage, shredded
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 2 tablespoons tomato paste
- 2 bay leaves
- 1 teaspoon sugar
- Salt and pepper to taste
- 1/2 cup sour cream, for serving
Instructions
- In a large pot, combine the grated beets and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the chopped onion, diced potatoes, grated carrots, shredded cabbage, minced garlic, diced tomatoes, tomato paste, bay leaves, sugar, salt, and pepper to the pot. Simmer for an additional 30-40 minutes, or until the vegetables are tender.
- Remove the bay leaves and adjust the seasoning if needed.
- Serve the borscht hot, topped with a dollop of sour cream.
