Kotlet Po-Kyivsky, also known as Ukrainian Chicken Kiev, is a classic Eastern European dish that features tender chicken breasts filled with seasoned butter and herbs, then breaded and fried to golden perfection.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup unsalted butter, softened
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon lemon juice
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- Salt and pepper to taste
- Oil for frying
Instructions
- Cut a pocket into each chicken breast, being careful not to cut all the way through.
- In a small bowl, mix together the softened butter, garlic, parsley, and lemon juice. Season with salt and pepper.
- Divide the seasoned butter mixture evenly and stuff it into the pockets of the chicken breasts.
- Secure the openings with toothpicks.
- Coat the stuffed chicken breasts in flour, then dip into the beaten eggs, and finally coat with breadcrumbs, pressing gently to adhere.
- Heat oil in a large skillet over medium heat. Fry the chicken breasts for about 6-7 minutes on each side, or until golden brown and cooked through.
- Remove toothpicks before serving.
