Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup unsalted butter, softened
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon lemon juice
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Cut a pocket into each chicken breast, being careful not to cut all the way through.
  2. In a small bowl, mix together the softened butter, garlic, parsley, and lemon juice. Season with salt and pepper.
  3. Divide the seasoned butter mixture evenly and stuff it into the pockets of the chicken breasts.
  4. Secure the openings with toothpicks.
  5. Coat the stuffed chicken breasts in flour, then dip into the beaten eggs, and finally coat with breadcrumbs, pressing gently to adhere.
  6. Heat oil in a large skillet over medium heat. Fry the chicken breasts for about 6-7 minutes on each side, or until golden brown and cooked through.
  7. Remove toothpicks before serving.
