Ulcinj Shrimp Pilaf

Ingredients

  • 1 lb (450g) shrimp, peeled and deveined
  • 2 cups (400g) long-grain rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, diced
  • 4 cups (1 liter) chicken or vegetable broth
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  2. Add the rice to the pot and stir to coat the grains with the oil. Cook for 2-3 minutes, stirring occasionally.
  3. Stir in the diced tomatoes, paprika, and dried thyme. Season with salt and pepper.
  4. Pour in the chicken or vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 15 minutes.
  5. After 15 minutes, add the shrimp to the pot and stir gently. Cover and cook for an additional 5-7 minutes, or until the shrimp are pink and opaque.
  6. Once the shrimp are cooked and the rice is tender, remove the pot from the heat. Let the pilaf rest, covered, for 5 minutes before serving.
