Undhiyu Extravaganza
Undhiyu is a traditional Gujarati mixed vegetable dish that is typically prepared during the winter season. It is a flavorful and nutritious dish that is a must-try for anyone looking to explore the diverse and delicious cuisine of Gujarat.
Ingredients
- 1 cup fresh pigeon peas
- 1 cup fresh tuvar beans
- 1 cup small brinjals, slit into quarters
- 1 cup sweet potatoes, peeled and cubed
- 1 cup raw bananas, peeled and cubed
- 1 cup purple yam, peeled and cubed
- 1/2 cup fresh fenugreek leaves
- 1/2 cup fresh coriander leaves
- 1/4 cup grated coconut
- 1/4 cup sesame seeds
- 1/4 cup peanuts
- 2 tbsp ginger-green chili paste
- 1 tbsp sugar
- 1 tbsp lemon juice
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp ground coriander
- 1 tsp ground cumin
- Salt to taste
- Oil for frying
Instructions
- Prepare the masala by grinding together fresh coriander leaves, fresh fenugreek leaves, grated coconut, sesame seeds, peanuts, ginger-green chili paste, sugar, lemon juice, turmeric powder, red chili powder, ground coriander, ground cumin, and salt to taste.
- Stuff the masala into the brinjals, sweet potatoes, raw bananas, and purple yam.
- Heat oil in a large pan and add the stuffed vegetables along with fresh pigeon peas and tuvar beans.
- Cover and cook on low heat until the vegetables are tender, stirring occasionally.
- Serve hot with puris or rotis.
