Ingredients

  • 1 cup fresh pigeon peas
  • 1 cup fresh tuvar beans
  • 1 cup small brinjals, slit into quarters
  • 1 cup sweet potatoes, peeled and cubed
  • 1 cup raw bananas, peeled and cubed
  • 1 cup purple yam, peeled and cubed
  • 1/2 cup fresh fenugreek leaves
  • 1/2 cup fresh coriander leaves
  • 1/4 cup grated coconut
  • 1/4 cup sesame seeds
  • 1/4 cup peanuts
  • 2 tbsp ginger-green chili paste
  • 1 tbsp sugar
  • 1 tbsp lemon juice
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • Salt to taste
  • Oil for frying

Instructions

  1. Prepare the masala by grinding together fresh coriander leaves, fresh fenugreek leaves, grated coconut, sesame seeds, peanuts, ginger-green chili paste, sugar, lemon juice, turmeric powder, red chili powder, ground coriander, ground cumin, and salt to taste.
  2. Stuff the masala into the brinjals, sweet potatoes, raw bananas, and purple yam.
  3. Heat oil in a large pan and add the stuffed vegetables along with fresh pigeon peas and tuvar beans.
  4. Cover and cook on low heat until the vegetables are tender, stirring occasionally.
  5. Serve hot with puris or rotis.
