Ingredients

  • 1 lemongrass, thinly sliced
  • 2 kaffir lime leaves, thinly sliced
  • 1 tablespoon tamarind paste
  • 1 tablespoon palm sugar
  • 1 tablespoon lime juice
  • Salt to taste

Instructions

  1. In a large bowl, mix together the shredded green papaya, shredded coconut, red chilies, shallots, tomato, lemongrass, and kaffir lime leaves.
  2. In a small bowl, mix the tamarind paste, palm sugar, lime juice, and salt to make the dressing.
  3. Pour the dressing over the salad and toss to combine.
  4. Let the salad sit for 10 minutes to allow the flavors to meld together.
