Ingredients

  • 1 whole chicken, cut into pieces

  • 3 garlic cloves, minced

Instructions

  1. In a large pot, combine the chicken pieces, vinegar, onion, bell pepper, carrot, garlic, oregano, cumin, bay leaf, salt, and pepper.
  2. Cover and let marinate in the refrigerator for at least 2 hours, or overnight for best results.
  3. Heat the olive oil in a large skillet over medium heat. Remove the chicken pieces from the marinade and brown them on all sides, about 5 minutes per side.
  4. Pour the marinade over the browned chicken, cover, and simmer for 20 minutes, or until the chicken is cooked through.
  5. Remove the bay leaf and serve the chicken escabeche warm, with the vegetables and marinade spooned over the top.
