Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, chopped
  • 3 carrots, sliced
  • 3 potatoes, peeled and cubed
  • 2 ears of corn, cut into thirds
  • 1 sweet potato, peeled and cubed
  • 1/2 small cabbage, chopped
  • 2 chorizo sausages, sliced
  • 1 can of white beans, drained and rinsed
  • 1 bay leaf
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 6 cups chicken broth

Instructions

  1. In a large pot, brown the chicken pieces over medium heat for 5 minutes.
  2. Add the onions and cook until translucent.
  3. Stir in the carrots, potatoes, sweet potato, corn, cabbage, and chorizo.
  4. Pour in the chicken broth and add the bay leaf, paprika, salt, and pepper.
  5. Simmer for 30 minutes, then add the white beans and continue to simmer for another 15 minutes.
  6. Adjust seasoning if needed and serve hot.
