Ingredients
- 1 cup raisins
- 1 cup chopped mixed candied fruit
- 1 cup chopped nuts
- 1/2 cup brandy
- 1 cup butter, softened
- 1 cup sugar
- 4 eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
Instructions
- In a small bowl, combine the raisins, candied fruit, and nuts. Pour the brandy over the mixture and let it soak for at least 1 hour.
- Preheat the oven to 325°F (165°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time.
- In a separate bowl, sift together the flour, baking powder, nutmeg, cinnamon, and salt. Gradually mix the dry ingredients into the creamed mixture.
- Stir in the soaked fruit and nuts, along with any remaining brandy, and the vanilla extract. Mix until well blended.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 1 hour in the preheated oven, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then remove from the pan and cool completely on a wire rack.
