Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 2 egg yolks
- 1 teaspoon vanilla extract
- 1 cup jam (any flavor of your choice)
Instructions
- In a large bowl, combine the flour, sugar, baking powder, and salt.
- Add the cold butter to the dry ingredients and use your fingers to rub the butter into the flour mixture until it resembles coarse crumbs.
- In a small bowl, whisk together the egg yolks and vanilla extract. Add this mixture to the flour and butter mixture, and mix until a dough forms.
- Divide the dough in half. Press one half of the dough into the bottom of a tart pan, creating an even layer.
- Spread the jam over the dough in the tart pan.
- Roll out the remaining dough and cut it into strips to create a lattice pattern over the jam.
- Bake the tart in a preheated oven at 350°F (175°C) for 40 minutes, or until the crust is golden brown.
- Allow the tart to cool before slicing and serving.
