Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup jam (any flavor of your choice)

Instructions

  1. In a large bowl, combine the flour, sugar, baking powder, and salt.
  2. Add the cold butter to the dry ingredients and use your fingers to rub the butter into the flour mixture until it resembles coarse crumbs.
  3. In a small bowl, whisk together the egg yolks and vanilla extract. Add this mixture to the flour and butter mixture, and mix until a dough forms.
  4. Divide the dough in half. Press one half of the dough into the bottom of a tart pan, creating an even layer.
  5. Spread the jam over the dough in the tart pan.
  6. Roll out the remaining dough and cut it into strips to create a lattice pattern over the jam.
  7. Bake the tart in a preheated oven at 350°F (175°C) for 40 minutes, or until the crust is golden brown.
  8. Allow the tart to cool before slicing and serving.
