Ingredients

  • 1 lb beef stew meat, cut into chunks
  • 4 chorizo sausages
  • 2 onions, chopped
  • 4 carrots, peeled and sliced
  • 2 sweet potatoes, peeled and cubed
  • 2 ears of corn, cut into thirds
  • 1 small cabbage, cut into wedges
  • 4 potatoes, peeled and quartered
  • 1 bunch of fresh parsley, tied with kitchen twine
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the beef stew meat and chorizo sausages over medium heat.
  2. Add the onions and cook until translucent.
  3. Add enough water to cover the meat and bring to a boil. Skim off any foam that rises to the surface.
  4. Add the carrots, sweet potatoes, corn, cabbage, potatoes, and tied parsley to the pot. Season with salt and pepper.
  5. Simmer the stew for about 1 hour, or until the meat and vegetables are tender.
  6. Remove the parsley bunch and discard.
  7. Adjust the seasoning if needed and serve the stew hot.
