Ingredients
- 1 lb beef stew meat, cut into chunks
- 4 chorizo sausages
- 2 onions, chopped
- 4 carrots, peeled and sliced
- 2 sweet potatoes, peeled and cubed
- 2 ears of corn, cut into thirds
- 1 small cabbage, cut into wedges
- 4 potatoes, peeled and quartered
- 1 bunch of fresh parsley, tied with kitchen twine
- Salt and pepper to taste
Instructions
- In a large pot, brown the beef stew meat and chorizo sausages over medium heat.
- Add the onions and cook until translucent.
- Add enough water to cover the meat and bring to a boil. Skim off any foam that rises to the surface.
- Add the carrots, sweet potatoes, corn, cabbage, potatoes, and tied parsley to the pot. Season with salt and pepper.
- Simmer the stew for about 1 hour, or until the meat and vegetables are tender.
- Remove the parsley bunch and discard.
- Adjust the seasoning if needed and serve the stew hot.
