Ingredients

  • 4 medium potatoes, boiled and diced
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 green chili, slit
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and add mustard seeds. Once they splutter, add the chopped onions and sauté until golden brown.
  2. Add the chopped tomatoes and green chili. Cook until the tomatoes turn mushy.
  3. Now add the turmeric powder, red chili powder, coriander powder, and garam masala. Mix well and cook for a few minutes.
  4. Add the boiled and diced potatoes. Mix gently to coat the potatoes with the masala.
  5. Season with salt and cook for 5-7 minutes, stirring occasionally.
  6. Garnish with fresh coriander leaves and serve hot.
