Ingredients

  • 4 large potatoes, peeled and diced
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 sprig curry leaves
  • 2-3 green chilies, slit
  • 1 onion, finely chopped
  • 1 tsp turmeric powder
  • 1 tbsp Chettinad masala powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and add mustard seeds. Once they start to splutter, add cumin seeds, curry leaves, and green chilies.
  2. Add the chopped onions and sauté until they turn translucent.
  3. Add the diced potatoes, turmeric powder, Chettinad masala powder, and salt. Mix well to coat the potatoes with the spices.
  4. Cover and cook on medium heat until the potatoes are crispy and golden brown, stirring occasionally.
  5. Garnish with fresh coriander leaves and serve hot.
