Ingredients
- 4 large potatoes, peeled and diced
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 sprig curry leaves
- 2-3 green chilies, slit
- 1 onion, finely chopped
- 1 tsp turmeric powder
- 1 tbsp Chettinad masala powder
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a pan and add mustard seeds. Once they start to splutter, add cumin seeds, curry leaves, and green chilies.
- Add the chopped onions and sauté until they turn translucent.
- Add the diced potatoes, turmeric powder, Chettinad masala powder, and salt. Mix well to coat the potatoes with the spices.
- Cover and cook on medium heat until the potatoes are crispy and golden brown, stirring occasionally.
- Garnish with fresh coriander leaves and serve hot.
