Uttapam (fluffy Vegetable Uttapam)

Uttapam is a popular South Indian dish made from a fermented batter of rice and lentils. This recipe adds a fluffy twist to the traditional Uttapam by incorporating a variety of colorful vegetables.

Uttapam (fluffy Vegetable Uttapam)

Ingredients

  • 1 cup rice
  • 1/2 cup urad dal (split black lentils)
  • 1/4 teaspoon fenugreek seeds
  • 1 cup mixed vegetables (such as bell peppers, onions, tomatoes, and carrots), finely chopped
  • 1/2 teaspoon cumin seeds
  • 1 green chili, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Salt to taste
  • Oil for cooking

Instructions

  1. Rinse the rice, urad dal, and fenugreek seeds. Soak them in water for 4-6 hours.
  2. Drain the soaked ingredients and blend them into a smooth batter using a blender or food processor. Add water as needed to achieve a pancake batter-like consistency.
  3. Transfer the batter to a large bowl and let it ferment for 8-10 hours or overnight.
  4. Once fermented, add salt to the batter and mix well.
  5. Heat a non-stick pan or cast iron skillet over medium heat. Pour a ladleful of batter onto the pan and spread it into a thick circle.
  6. Sprinkle a portion of the mixed vegetables, cumin seeds, green chili, and cilantro on top of the batter.
  7. Drizzle some oil around the edges of the Uttapam and cook for 2-3 minutes until the bottom turns golden brown.
  8. Flip the Uttapam and cook the other side for an additional 2-3 minutes.
  9. Repeat the process with the remaining batter and vegetables.
  10. Serve the fluffy vegetable Uttapam hot with coconut chutney or sambar.
