Ingredients

  • 500g assorted meats (beef, tripe, and cow's skin)
  • 2 cups Uziza leaves, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 scotch bonnet peppers, chopped
  • 1/2 cup palm oil
  • 1 tablespoon ground crayfish
  • 1 teaspoon ground uziza seeds
  • 4 cups beef stock
  • Salt to taste

Instructions

  1. Wash and season the assorted meats with salt, onions, and garlic. Boil until tender.
  2. Heat the palm oil in a pot, add the chopped onions, garlic, and scotch bonnet peppers. Sauté for 3-5 minutes.
  3. Add the boiled assorted meats, ground crayfish, and uziza seeds. Stir well.
  4. Pour in the beef stock and simmer for 20 minutes.
  5. Add the chopped Uziza leaves and cook for an additional 5 minutes.
  6. Season with salt to taste and simmer for another 5 minutes.
  7. Remove from heat and serve hot.
