Uziza Soup With Assorted Meats (ofe Uziza)
Uziza Soup, also known as Ofe Uziza, is a traditional Nigerian soup that originates from the Benin Cuisine. It is a flavorful and aromatic soup made with Uziza leaves and assorted meats, creating a rich and hearty dish.
Ingredients
- 500g assorted meats (beef, tripe, and cow's skin)
- 2 cups Uziza leaves, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 scotch bonnet peppers, chopped
- 1/2 cup palm oil
- 1 tablespoon ground crayfish
- 1 teaspoon ground uziza seeds
- 4 cups beef stock
- Salt to taste
Instructions
- Wash and season the assorted meats with salt, onions, and garlic. Boil until tender.
- Heat the palm oil in a pot, add the chopped onions, garlic, and scotch bonnet peppers. Sauté for 3-5 minutes.
- Add the boiled assorted meats, ground crayfish, and uziza seeds. Stir well.
- Pour in the beef stock and simmer for 20 minutes.
- Add the chopped Uziza leaves and cook for an additional 5 minutes.
- Season with salt to taste and simmer for another 5 minutes.
- Remove from heat and serve hot.
