Vada Pav Enchiladas
Vada Pav Enchiladas are a fusion dish that combines the flavors of Indian fast food with the concept of Mexican enchiladas. These enchiladas are filled with spicy vada pav filling, wrapped in tortillas, and baked to perfection.
Ingredients
- 4 vada pav patties
- 4 large flour tortillas
- 1 cup tomato salsa
- 1 cup shredded cheese
- 1/2 cup chopped cilantro
- 1/4 cup sour cream
Instructions
- Preheat the oven to 375°F (190°C).
- Warm the vada pav patties in a pan over medium heat.
- Place a tortilla on a flat surface and spread a spoonful of tomato salsa in the center.
- Place a vada pav patty on top of the salsa, sprinkle with shredded cheese, and roll the tortilla into an enchilada.
- Repeat for the remaining tortillas and vada pav patties.
- Place the enchiladas in a baking dish, cover with more salsa and cheese, and bake for 15-20 minutes or until the cheese is melted and bubbly.
- Sprinkle chopped cilantro on top and serve with a dollop of sour cream.
