Vaduz Hirschfrikadellen In Pilzsauce (vaduz Venison Meatballs In Mushroom Sauce)

Ingredients

  • 500g ground venison
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup milk
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 250g mushrooms, sliced
  • 1 cup beef broth
  • 1/2 cup heavy cream
  • 2 tablespoons flour
  • 2 tablespoons butter

Instructions

  1. In a large bowl, mix together the ground venison, chopped onion, minced garlic, breadcrumbs, egg, milk, parsley, salt, and pepper. Form the mixture into meatballs.
  2. Heat the olive oil in a large skillet over medium heat. Brown the meatballs on all sides, then remove them from the skillet and set aside.
  3. In the same skillet, add the sliced mushrooms and cook until they release their juices and become golden brown.
  4. Sprinkle the flour over the mushrooms and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.
  5. Pour in the beef broth and stir to combine, scraping up any browned bits from the bottom of the skillet.
  6. Return the meatballs to the skillet, cover, and simmer for 15-20 minutes, or until the meatballs are cooked through.
  7. Stir in the heavy cream and butter, and simmer for an additional 5 minutes to thicken the sauce.
  8. Season with salt and pepper to taste. Serve the Vaduz Hirschfrikadellen in Pilzsauce hot, with your choice of side dishes.
