Ingredients
- 1.5 kg veal roast
- 2 tbsp olive oil
- 1 cup fresh breadcrumbs
- 2 tbsp chopped fresh parsley
- 1 tbsp chopped fresh thyme
- 1 tbsp chopped fresh rosemary
- Salt and pepper to taste
Instructions
- Preheat the oven to 180°C (350°F).
- Season the veal roast with salt and pepper, then rub it with olive oil.
- In a bowl, combine the fresh breadcrumbs, parsley, thyme, rosemary, and a pinch of salt and pepper.
- Press the herb mixture onto the surface of the veal roast to form a crust.
- Place the veal roast in a roasting pan and roast in the preheated oven for 1 hour, or until the internal temperature reaches 60°C (140°F) for medium doneness.
- Remove the veal roast from the oven and let it rest for 10 minutes before slicing and serving.
