Vaduz Veal Roast with Herb Crust (Vaduz Kalbsbraten mit Kräuterkruste)

Ingredients

  • 1.5 kg veal roast
  • 2 tbsp olive oil
  • 1 cup fresh breadcrumbs
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh thyme
  • 1 tbsp chopped fresh rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Season the veal roast with salt and pepper, then rub it with olive oil.
  3. In a bowl, combine the fresh breadcrumbs, parsley, thyme, rosemary, and a pinch of salt and pepper.
  4. Press the herb mixture onto the surface of the veal roast to form a crust.
  5. Place the veal roast in a roasting pan and roast in the preheated oven for 1 hour, or until the internal temperature reaches 60°C (140°F) for medium doneness.
  6. Remove the veal roast from the oven and let it rest for 10 minutes before slicing and serving.
