Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 2 teaspoons curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 can (14 oz) coconut milk
  • 2 cups mixed vegetables (such as bell peppers, carrots, and green beans), chopped
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pan over medium heat. Add the chopped onion and cook until soft and translucent.
  2. Add the minced garlic and grated ginger to the pan, and cook for another 2 minutes.
  3. Stir in the curry powder, turmeric, cumin, and coriander, and cook for 1 minute to toast the spices.
  4. Pour in the coconut milk and bring the mixture to a simmer.
  5. Add the mixed vegetables to the pan and simmer for 15-20 minutes, or until the vegetables are tender.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh cilantro before serving.
