Vaduz Vegetable Curry (Vaduz Gemüsecurry)

Ingredients
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon ginger, grated
- 2 teaspoons curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 can (14 oz) coconut milk
- 2 cups mixed vegetables (such as bell peppers, carrots, and green beans), chopped
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pan over medium heat. Add the chopped onion and cook until soft and translucent.
- Add the minced garlic and grated ginger to the pan, and cook for another 2 minutes.
- Stir in the curry powder, turmeric, cumin, and coriander, and cook for 1 minute to toast the spices.
- Pour in the coconut milk and bring the mixture to a simmer.
- Add the mixed vegetables to the pan and simmer for 15-20 minutes, or until the vegetables are tender.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
