Vaduz Vegetable Strudel (Vaduz Gemüsestrudel)

Ingredients

  • 6 sheets phyllo dough
  • 2 cups mixed vegetables (such as bell peppers, zucchini, and carrots), diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup bread crumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  3. Add the diced vegetables, thyme, oregano, salt, and pepper to the skillet. Cook for 5-7 minutes, or until the vegetables are tender. Remove from heat and let cool.
  4. Place one sheet of phyllo dough on a clean, dry surface. Brush the sheet with melted butter and sprinkle with bread crumbs. Repeat with the remaining sheets, stacking them on top of each other.
  5. Spoon the vegetable mixture along one long edge of the phyllo stack, leaving a border on the sides. Carefully roll the phyllo and vegetable filling into a log, tucking in the sides as you roll.
  6. Place the strudel on a baking sheet lined with parchment paper. Brush the top with additional melted butter.
  7. Bake for 25-30 minutes, or until the strudel is golden brown and crispy.
  8. Let the strudel cool for a few minutes before slicing and serving.
