Vangi Bhaat is a popular Maharashtrian rice dish made with brinjal (eggplant) and flavorful spices. It is a delicious one-pot meal that is perfect for lunch or dinner.

Vangi Bhaat (वांगी भात)

Ingredients

  • 1 cup basmati rice
  • 1 large brinjal (eggplant), diced
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1/4 cup peanuts
  • 2-3 green chilies, slit
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • 2-3 tbsp oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Wash the rice and soak it in water for 20 minutes.
  2. Heat oil in a pan and add mustard seeds and cumin seeds. Let them splutter.
  3. Add peanuts and sauté until they turn golden brown.
  4. Add chopped onions and green chilies. Sauté until the onions turn translucent.
  5. Add diced brinjal and cook until it becomes soft.
  6. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  7. Add chopped tomatoes and cook until they turn mushy.
  8. Drain the soaked rice and add it to the pan. Mix gently.
  9. Add 2 cups of water and garam masala. Stir well.
  10. Cover the pan and cook the rice on low heat until it is fully cooked.
  11. Garnish with fresh coriander leaves and serve hot.
