Vangi Bhaat (वांगी भात)
Vangi Bhaat is a popular Maharashtrian rice dish made with brinjal (eggplant) and flavorful spices. It is a delicious one-pot meal that is perfect for lunch or dinner.
Ingredients
- 1 cup basmati rice
- 1 large brinjal (eggplant), diced
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 1/4 cup peanuts
- 2-3 green chilies, slit
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 2-3 tbsp oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Wash the rice and soak it in water for 20 minutes.
- Heat oil in a pan and add mustard seeds and cumin seeds. Let them splutter.
- Add peanuts and sauté until they turn golden brown.
- Add chopped onions and green chilies. Sauté until the onions turn translucent.
- Add diced brinjal and cook until it becomes soft.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Add chopped tomatoes and cook until they turn mushy.
- Drain the soaked rice and add it to the pan. Mix gently.
- Add 2 cups of water and garam masala. Stir well.
- Cover the pan and cook the rice on low heat until it is fully cooked.
- Garnish with fresh coriander leaves and serve hot.
