Vanilla-infused Chicken Satay

Ingredients

  • 1 lb chicken breast, cut into strips
  • 2 vanilla beans, split and seeds scraped
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1/4 cup coconut milk
  • 1/4 cup peanut butter
  • 1 tbsp lime juice
  • 1 garlic clove, minced
  • 1/2 tsp ground coriander
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine the vanilla seeds, soy sauce, brown sugar, coconut milk, peanut butter, lime juice, garlic, coriander, cayenne pepper, salt, and pepper. Mix well to create the marinade.
  2. Add the chicken strips to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, allowing the flavors to infuse.
  3. Thread the marinated chicken strips onto the soaked skewers.
  4. Heat a grill or grill pan over medium-high heat. Grill the chicken satay for 3-4 minutes on each side, or until cooked through and slightly charred.
  5. In a small saucepan, heat the remaining marinade over medium heat until it thickens into a rich peanut sauce. Serve the chicken satay with the peanut sauce on the side.
