Ingredients
- 1 lb chicken breast, cut into strips
- 2 vanilla beans, split and seeds scraped
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 1/4 cup coconut milk
- 1/4 cup peanut butter
- 1 tbsp lime juice
- 1 garlic clove, minced
- 1/2 tsp ground coriander
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- Wooden skewers, soaked in water
Instructions
- In a bowl, combine the vanilla seeds, soy sauce, brown sugar, coconut milk, peanut butter, lime juice, garlic, coriander, cayenne pepper, salt, and pepper. Mix well to create the marinade.
- Add the chicken strips to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, allowing the flavors to infuse.
- Thread the marinated chicken strips onto the soaked skewers.
- Heat a grill or grill pan over medium-high heat. Grill the chicken satay for 3-4 minutes on each side, or until cooked through and slightly charred.
- In a small saucepan, heat the remaining marinade over medium heat until it thickens into a rich peanut sauce. Serve the chicken satay with the peanut sauce on the side.
