Vanilla Infused Creole Shrimp

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons Creole seasoning
  • 1 vanilla bean, split and seeds scraped
  • 3 cloves garlic, minced
  • 1 onion, finely chopped
  • 1 bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the garlic, onion, and bell pepper, and sauté until the vegetables are tender.
