Vanilla-infused Lobster Bisque

Ingredients
- 2 lobsters, cooked and meat removed
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 4 cups fish stock
- 1 cup heavy cream
- 2 tablespoons tomato paste
- 2 vanilla beans, split and seeds scraped
- 1/4 cup brandy
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the onion, carrots, celery, and garlic. Cook until the vegetables are soft.
- Add the lobster shells and cook for 5 minutes to release their flavors.
- Pour in the fish stock and bring to a boil. Reduce heat and let it simmer for 30 minutes.
- Strain the stock and discard the solids. Return the stock to the pot.
- Add the heavy cream, tomato paste, vanilla beans and seeds, and brandy. Simmer for 10 minutes.
- Add the lobster meat and simmer for an additional 5 minutes.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
