Vanilla-infused Lobster Bisque

Ingredients

  • 2 lobsters, cooked and meat removed
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 4 cups fish stock
  • 1 cup heavy cream
  • 2 tablespoons tomato paste
  • 2 vanilla beans, split and seeds scraped
  • 1/4 cup brandy
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion, carrots, celery, and garlic. Cook until the vegetables are soft.
  2. Add the lobster shells and cook for 5 minutes to release their flavors.
  3. Pour in the fish stock and bring to a boil. Reduce heat and let it simmer for 30 minutes.
  4. Strain the stock and discard the solids. Return the stock to the pot.
  5. Add the heavy cream, tomato paste, vanilla beans and seeds, and brandy. Simmer for 10 minutes.
  6. Add the lobster meat and simmer for an additional 5 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy!
