Vanuatu Vanilla Bean Cheesecake

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 vanilla bean, seeds scraped
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, mix together the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat the cream cheese and 1 cup sugar until smooth. Beat in the eggs one at a time. Stir in the vanilla bean seeds and vanilla extract. Fold in the sour cream. Pour over the crust in the springform pan.
  4. Bake in the preheated oven for 60 minutes. Turn off the oven, and let the cheesecake cool in the oven with the door ajar for 1 hour.
  5. Chill in the refrigerator for at least 4 hours before serving.
