Vanuatu Vanilla Bean Cheesecake

Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 vanilla bean, seeds scraped
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, mix together the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
- In a large bowl, beat the cream cheese and 1 cup sugar until smooth. Beat in the eggs one at a time. Stir in the vanilla bean seeds and vanilla extract. Fold in the sour cream. Pour over the crust in the springform pan.
- Bake in the preheated oven for 60 minutes. Turn off the oven, and let the cheesecake cool in the oven with the door ajar for 1 hour.
- Chill in the refrigerator for at least 4 hours before serving.
