Vanuatu Vanilla Creme Brulee

Ingredients
- 4 egg yolks
- 1/4 cup sugar
- 1 1/2 cups heavy cream
- 1 vanilla bean, split and seeds scraped out
- 1/4 cup brown sugar
Instructions
- Preheat the oven to 300°F (150°C).
- In a bowl, whisk together the egg yolks and sugar until well combined.
- In a saucepan, heat the heavy cream and vanilla bean seeds over medium heat until it just begins to simmer. Remove from heat.
- Slowly pour the hot cream into the egg mixture, whisking constantly.
- Strain the mixture through a fine sieve into a pouring jug.
- Divide the mixture among four ramekins and place them in a deep baking dish. Fill the dish with hot water halfway up the sides of the ramekins.
- Bake for 40-45 minutes, or until the custards are set but still slightly wobbly in the center.
- Remove the ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 2 hours, or overnight.
- Before serving, sprinkle a thin, even layer of brown sugar over the custards. Use a kitchen torch to caramelize the sugar until it forms a crispy top.
