Vanuatu Vanilla Creme Brulee

Ingredients

  • 4 egg yolks
  • 1/4 cup sugar
  • 1 1/2 cups heavy cream
  • 1 vanilla bean, split and seeds scraped out
  • 1/4 cup brown sugar

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a bowl, whisk together the egg yolks and sugar until well combined.
  3. In a saucepan, heat the heavy cream and vanilla bean seeds over medium heat until it just begins to simmer. Remove from heat.
  4. Slowly pour the hot cream into the egg mixture, whisking constantly.
  5. Strain the mixture through a fine sieve into a pouring jug.
  6. Divide the mixture among four ramekins and place them in a deep baking dish. Fill the dish with hot water halfway up the sides of the ramekins.
  7. Bake for 40-45 minutes, or until the custards are set but still slightly wobbly in the center.
  8. Remove the ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 2 hours, or overnight.
  9. Before serving, sprinkle a thin, even layer of brown sugar over the custards. Use a kitchen torch to caramelize the sugar until it forms a crispy top.
