- 1 kg large prawns, peeled and deveined
- 2 tablespoons coconut oil
- 3 cloves garlic, minced
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1 red chili, finely chopped
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/2 cup coconut milk
- 2 tablespoons chopped fresh coriander
Instructions
- Heat the coconut oil in a large pan over medium heat.
- Add the garlic, onion, and red chili, and sauté until the onion is soft and translucent.
- Add the tomatoes, paprika, cayenne pepper, and salt. Cook for 5 minutes, stirring occasionally.
- Add the prawns and coconut milk. Cook for 5-7 minutes, or until the prawns are pink and cooked through.
- Sprinkle with fresh coriander before serving.
