  • 1.5 lbs beef, cut into cubes
  • 2 tbsp curry powder
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 cups coconut milk
  • 2 cups mixed vegetables (carrots, potatoes, green beans)
  • 2 tbsp vegetable oil
