Vanuatuan Curry Beef Skewers

Ingredients

  • 1.5 lbs beef sirloin, cut into 1-inch cubes
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp curry powder
  • 1/2 cup coconut milk
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • Salt and pepper to taste
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, mix together the onion, garlic, curry powder, coconut milk, soy sauce, brown sugar, salt, and pepper.
  2. Add the beef cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour.
  3. Preheat a stovetop grill or grill pan over medium-high heat.
  4. Thread the marinated beef cubes onto the soaked wooden skewers.
  5. Grill the skewers for about 3-4 minutes per side, or until the beef is cooked to your desired doneness.
