वाराणसी का बैंगन भर्ता (Varanasi Ka Baingan Bharta) is a traditional dish from the Uttar Pradesh Cuisine. It is a flavorful and spicy mashed eggplant dish that is perfect to be enjoyed with roti or rice.

Varanasi Ka Baingan Bharta (वाराणसी का बैंगन भर्ता)

Ingredients

  • 2 large eggplants
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 2 tablespoons oil
  • Fresh coriander leaves for garnish

Instructions

  1. Roast the eggplants on an open flame until the skin is charred and the flesh is soft. Let them cool, then peel off the skin and mash the flesh.
  2. Heat oil in a pan and add cumin seeds. Once they splutter, add the onions and sauté until golden brown.
  3. Add the ginger-garlic paste, green chilies, and tomatoes. Cook until the tomatoes are soft.
  4. Stir in the turmeric powder, red chili powder, and garam masala. Cook for a few minutes.
  5. Add the mashed eggplant and mix well. Cook for 5-7 minutes, stirring occasionally.
  6. Garnish with fresh coriander leaves and serve hot with roti or rice.
