वाराणसी का बैंगन भर्ता (Varanasi Ka Baingan Bharta) is a traditional dish from the Uttar Pradesh Cuisine. It is a flavorful and spicy mashed eggplant dish that is perfect to be enjoyed with roti or rice.
Ingredients
- 2 large eggplants
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, finely chopped
- 1 teaspoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 2 tablespoons oil
- Fresh coriander leaves for garnish
Instructions
- Roast the eggplants on an open flame until the skin is charred and the flesh is soft. Let them cool, then peel off the skin and mash the flesh.
- Heat oil in a pan and add cumin seeds. Once they splutter, add the onions and sauté until golden brown.
- Add the ginger-garlic paste, green chilies, and tomatoes. Cook until the tomatoes are soft.
- Stir in the turmeric powder, red chili powder, and garam masala. Cook for a few minutes.
- Add the mashed eggplant and mix well. Cook for 5-7 minutes, stirring occasionally.
- Garnish with fresh coriander leaves and serve hot with roti or rice.
