Varanasi Ka Malaiyo (वाराणसी का मलाइयो)

Ingredients

  • 1 liter full-fat milk
  • 1/2 cup sugar
  • 1/4 teaspoon saffron strands
  • 1 tablespoon chopped pistachios
  • 1 tablespoon chopped almonds

Instructions

  1. In a large heavy-bottomed pan, bring the milk to a boil over medium heat.
  2. Reduce the heat to low and simmer the milk, stirring occasionally, until it reduces to half its original quantity, about 1.5 hours.
  3. Add the sugar and saffron strands to the reduced milk and cook for another 10 minutes, stirring constantly.
  4. Remove the pan from the heat and let the malaiyo cool to room temperature.
  5. Once cooled, transfer the malaiyo to serving bowls and garnish with chopped pistachios and almonds.
