Varanasi Ka Tamatar Ka Chokha (वाराणसी का टमाटर का चोखा)

Ingredients

  • 4 large tomatoes
  • 4 cloves of garlic
  • 2 green chilies
  • 1 teaspoon cumin seeds
  • 1 tablespoon mustard oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Roast the tomatoes, garlic, and green chilies on an open flame until the skin is charred.
  2. Peel the charred skin off the tomatoes and garlic.
  3. Mash the roasted tomatoes, garlic, and green chilies together in a bowl.
  4. Heat mustard oil in a pan and add cumin seeds. Let them crackle.
  5. Add the mashed tomato mixture to the pan and cook for 5-7 minutes.
  6. Season with salt and garnish with fresh coriander leaves.
