Varanasi Ki Baati Chokha (वाराणसी की बाटी चोखा)
वाराणसी की बाटी चोखा (Varanasi Ki Baati Chokha) is a traditional dish from the Uttar Pradesh Cuisine, known for its rustic and flavorful taste. This dish consists of crispy baatis (dough balls) served with spicy chokha (mashed vegetables), making it a wholesome and satisfying meal.
Ingredients
- 2 cups whole wheat flour
- 1/2 cup ghee (clarified butter)
- 1 tsp carom seeds
- 1/2 tsp salt
- 4 medium potatoes, boiled and mashed
- 2 tomatoes, finely chopped
- 2 onions, finely chopped
- 2 green chilies, finely chopped
- 1/2 cup fresh coriander leaves, chopped
- 1 tsp mustard oil
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- Salt to taste
Instructions
- In a large mixing bowl, combine the whole wheat flour, 1/4 cup ghee, carom seeds, and salt. Gradually add water and knead into a stiff dough. Cover and let it rest for 30 minutes.
- Divide the dough into equal portions and shape them into round balls. Flatten slightly to form baatis.
- Preheat the oven to 180°C. Place the baatis on a baking sheet and bake for 30-35 minutes until golden brown and cooked through.
- In a mixing bowl, combine the mashed potatoes, tomatoes, onions, green chilies, coriander leaves, mustard oil, cumin seeds, turmeric powder, red chili powder, and salt to make the chokha.
- Heat the remaining ghee in a pan and temper with cumin seeds. Add the chokha mixture and cook for 5-7 minutes, stirring occasionally.
- Once the baatis are ready, serve them hot with the spicy chokha.
