Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup warm water
  • 1 egg
  • 1/2 tsp salt
  • 1 cup mashed potatoes
  • 1/2 cup grated cheese
  • 1/4 cup chopped onions
  • 2 tbsp butter
  • Sour cream (for serving)

Instructions

  1. In a large bowl, combine the flour and salt. Make a well in the center and add the egg and water. Mix until a dough forms.
  2. On a floured surface, roll out the dough and cut it into circles using a glass or cookie cutter.
  3. In a separate bowl, mix the mashed potatoes, grated cheese, and chopped onions.
  4. Place a spoonful of the filling onto each dough circle. Fold the dough over the filling and press the edges to seal.
  5. Bring a large pot of salted water to a boil. Cook the vareniki in batches for about 5 minutes, or until they float to the surface.
  6. In a skillet, melt the butter and sauté the vareniki until lightly golden.
  7. Serve the vareniki with a dollop of sour cream.
