Ingredients
- 2 cups all-purpose flour
- 1 egg
- 1/2 cup water
- 1/2 tsp salt
- 1 lb potatoes, boiled and mashed
- 1/2 cup cheddar cheese, grated
- 1/4 cup onion, finely chopped
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the flour, egg, water, and salt. Knead the dough until smooth, then cover and let it rest for 30 minutes.
- In a separate bowl, mix together the mashed potatoes, cheddar cheese, and chopped onion. Season with salt and pepper.
- Roll out the dough on a floured surface and cut it into circles using a round cutter or a glass.
- Place a spoonful of the potato filling in the center of each circle, then fold the dough over and seal the edges to form a dumpling.
- Bring a large pot of salted water to a boil, then add the varenyky and cook for 5-7 minutes, or until they float to the surface.
- Remove the varenyky with a slotted spoon and serve hot with sour cream or melted butter.
