Varenyky (ukrainian Dumplings Delight)

Ingredients

  • 2 cups all-purpose flour
  • 1 egg
  • 1/2 cup water
  • 1/2 tsp salt
  • 1 lb potatoes, boiled and mashed
  • 1/2 cup cheddar cheese, grated
  • 1/4 cup onion, finely chopped
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the flour, egg, water, and salt. Knead the dough until smooth, then cover and let it rest for 30 minutes.
  2. In a separate bowl, mix together the mashed potatoes, cheddar cheese, and chopped onion. Season with salt and pepper.
  3. Roll out the dough on a floured surface and cut it into circles using a round cutter or a glass.
  4. Place a spoonful of the potato filling in the center of each circle, then fold the dough over and seal the edges to form a dumpling.
  5. Bring a large pot of salted water to a boil, then add the varenyky and cook for 5-7 minutes, or until they float to the surface.
  6. Remove the varenyky with a slotted spoon and serve hot with sour cream or melted butter.
