Varenyky Vortex

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup water
  • 1 cup mashed potatoes
  • 1/2 cup cheddar cheese, grated
  • 1/4 cup onion, finely chopped
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 1/4 cup sour cream (for serving)

Instructions

  1. In a large bowl, mix the flour and salt. In a separate bowl, beat the egg and water together. Gradually add the egg mixture to the flour, stirring until a dough forms.
  2. Knead the dough on a floured surface until smooth. Cover and let it rest for 30 minutes.
  3. In a separate bowl, mix the mashed potatoes, cheddar cheese, onion, salt, and pepper.
  4. Roll out the dough and cut it into circles. Place a spoonful of the potato filling in the center of each circle. Fold the dough over the filling and press the edges to seal.
  5. Bring a large pot of salted water to a boil. Cook the varenyky in batches for about 5 minutes, or until they float to the surface.
  6. Remove the varenyky with a slotted spoon and drain. In a separate pan, melt the butter and sauté the varenyky until lightly golden.
  7. Serve the varenyky with a dollop of sour cream.
