Varenyky Vortex
Varenyky, also known as pierogi, are a traditional Ukrainian dish consisting of filled dumplings. This recipe for Varenyky Vortex is a delicious and comforting dish that is perfect for a cozy family dinner or a special occasion.
Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup water
- 1 cup mashed potatoes
- 1/2 cup cheddar cheese, grated
- 1/4 cup onion, finely chopped
- Salt and pepper to taste
- 2 tablespoons butter
- 1/4 cup sour cream (for serving)
Instructions
- In a large bowl, mix the flour and salt. In a separate bowl, beat the egg and water together. Gradually add the egg mixture to the flour, stirring until a dough forms.
- Knead the dough on a floured surface until smooth. Cover and let it rest for 30 minutes.
- In a separate bowl, mix the mashed potatoes, cheddar cheese, onion, salt, and pepper.
- Roll out the dough and cut it into circles. Place a spoonful of the potato filling in the center of each circle. Fold the dough over the filling and press the edges to seal.
- Bring a large pot of salted water to a boil. Cook the varenyky in batches for about 5 minutes, or until they float to the surface.
- Remove the varenyky with a slotted spoon and drain. In a separate pan, melt the butter and sauté the varenyky until lightly golden.
- Serve the varenyky with a dollop of sour cream.
