Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup water
  • 1 cup mashed potatoes
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup onion, finely chopped
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 1/4 cup sour cream (optional, for serving)

Instructions

  1. In a large bowl, mix the flour and salt. Add the egg and water, and knead the dough until smooth. Cover and let it rest for 30 minutes.
  2. In a separate bowl, combine the mashed potatoes, cheddar cheese, onion, salt, and pepper.
  3. Roll out the dough on a floured surface and cut out circles using a cookie cutter or a glass.
  4. Place a spoonful of the potato filling in the center of each circle. Fold the dough over the filling and press the edges to seal.
  5. Bring a large pot of salted water to a boil. Cook the varenyky in batches for about 5 minutes, or until they float to the surface.
  6. Remove the varenyky with a slotted spoon and toss them in melted butter.
  7. Serve hot with a dollop of sour cream if desired.
