Ingredients
- 1 head of cauliflower, cut into florets
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 8 small corn tortillas
- 1/2 cup shredded red cabbage
- 1/4 cup chopped fresh cilantro
- Lime wedges for serving
- 1/2 cup cashews, soaked in water for 2 hours
- 1/4 cup water
- 2 tablespoons lime juice
- 1 clove garlic
- Salt to taste
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss the cauliflower florets with olive oil, chili powder, cumin, garlic powder, salt, and pepper until evenly coated.
- Spread the cauliflower in a single layer on a baking sheet and roast for 20-25 minutes, or until tender and golden brown.
- While the cauliflower is roasting, make the lime crema. In a blender, combine the soaked cashews, water, lime juice, garlic, and salt. Blend until smooth and creamy.
- Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.
- To assemble the tacos, fill each tortilla with roasted cauliflower, shredded red cabbage, and chopped cilantro. Drizzle with the lime crema and serve with lime wedges on the side.
