Ingredients

  • 1 head of cauliflower, cut into florets
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1/2 cup shredded red cabbage
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving
  • 1/2 cup cashews, soaked in water for 2 hours
  • 1/4 cup water
  • 2 tablespoons lime juice
  • 1 clove garlic
  • Salt to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the cauliflower florets with olive oil, chili powder, cumin, garlic powder, salt, and pepper until evenly coated.
  3. Spread the cauliflower in a single layer on a baking sheet and roast for 20-25 minutes, or until tender and golden brown.
  4. While the cauliflower is roasting, make the lime crema. In a blender, combine the soaked cashews, water, lime juice, garlic, and salt. Blend until smooth and creamy.
  5. Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.
  6. To assemble the tacos, fill each tortilla with roasted cauliflower, shredded red cabbage, and chopped cilantro. Drizzle with the lime crema and serve with lime wedges on the side.
