Ingredients
- 1 cup red lentils
- 1 can (14 oz) coconut milk
- 1 onion, diced
- 3 cloves garlic, minced

- 1 tsp cumin
- 4 cups vegetable broth
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.
- Add the curry powder, turmeric, and cumin to the pot, and stir to coat the onions and garlic.
- Rinse the red lentils under cold water, then add them to the pot along with the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the lentils are tender.
- Pour in the coconut milk and stir to combine. Let the soup simmer for an additional 5 minutes to heat through.
