Vegan Coconut Curry Lentil Soup

Ingredients

  • 1 cup red lentils
  • 1 can (14 oz) coconut milk
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 4 cups vegetable broth
  • 1 tbsp olive oil

Instructions
