Ingredients
- 1 lb (450g) potato gnocchi
- 2 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 8 oz (225g) cremini mushrooms, sliced
- 1 cup (240ml) vegetable broth
- 1 cup (240ml) unsweetened almond milk
- 2 tbsp nutritional yeast
- 1 tsp dried thyme
- 4 cups (120g) fresh spinach
- Salt and pepper to taste
Instructions
- In a large pot of salted boiling water, cook the gnocchi according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the mushrooms to the skillet and cook until they release their juices and start to brown.
- Pour in the vegetable broth, almond milk, nutritional yeast, and dried thyme. Stir to combine and simmer for 5 minutes.
- Add the cooked gnocchi and fresh spinach to the skillet. Cook until the spinach wilts and the sauce thickens.
- Season with salt and pepper to taste.
